Vincent's recipes Spelt is cooked for soup or salad, in gratin and also for dessert. It suits game, roasted meat and fish.
Basic cooking (for 6 persons)
500 g of small spelt. Wash thoroughly and cook in 4 liters of salted water with pepper and bunch of mixed herbs for around 30 min. Stir in from time to time, stop the heat and leave to swell in water for 5 to 10 min. Drain and rinse in cold water. This preparation may be elaborated the day before. Net Weight 17.64 oz.
